pose a threat to the reputation of your cooking. We at 99pancakes are famous for our delicate crepes and fabulous

choice for advice. Here are a few tips that can make your pancakes taste
astounding, just like ours.
Hot Tips:
- Pick a good recipe: Recipes can vary the final outcome of your perfect pancake. Find a recipe where the batter should be higher on the thick side and still have an easy flow for a fluffy pancake. Maintain a balance between wet and dry ingredients, so as not to make it to soggy or dry.
- Vanilla Divine: Add a teaspoon of vanilla extract to your pancake batter, this will give the batter a superb taste and flavour. Vanilla extract in pancakes does what salt does to cooking.
- Buttermilk Secret: Use buttermilk in cooking even if the recipe calls for regular milk. Since buttermilk has a lot of acid content, it reacts with the baking powder on a rapid level and gives better lift with yummy fluffy pancakes.
- Baking Powder Check: Keep a very close attention to the amount of baking powder you put in the batter. We recommended adding 1 ½ tsp of baking powder as per cup of flour. In case the recipe calls for baking powder and baking soda, it needs to be adjusted as per proportion as this may cause an unpleasant aftertaste.
- Lower the flame: Pancakes that are cooked on high heat will cook faster at the edge and cause it to get brown, however, the inside will remain raw and uncooked. Cook one pancake and keep fluctuating the heat till you find the best cooking flame from your stove. Observe the first few for a better judgment on the temperature.
- Less oil: It is advised to use very little oil or fat while cooking pancakes. Remember the batter of pancakes soaks up oil really quick and you may end up with a soggy pancake.
- Non-Stick Pan: Your pan plays a very important role in making pancakes. Make sure you use a nonstick pan that requires less oil or fat to cook.
- Bubble Time: Pancakes take more time to cook on the side that was facing down the first time, so keep it a little longer than the flip side and make sure you wait for the bubbles to pop on the surface before you start flipping. Don’t forget to have a peek now and then on the bottom, ensuring it doesn't brown.
- Resting: Make sure that when the batter is ready, you let it lie for 5 to 10 minutes. This gives an opportunity for the baking powder to work and make you pancakes more fluffy and light.
- Avoid Excessive sugar: Remember the pancakes don't have to be sweet. After all it is topped with chocolates and stuffed with fruits and caramel. It is recommended to add less sugar to the batter when placed on the pan, as sugar molecules tend to caramelize and make the pancake turn brown faster leaving the inside uncooked.
·
To avoid a lumpy batter, ensure that you make a well in the
center of the flour and delicately mix the liquid.
·
You can use kitchen paper to wipe out any excess butter in
the pan.
·
You can use one big egg and two yolks, for an extra rich
pancake.

To flip the pancake flawlessly make sure one end is cooked
and then shuffle the pancake in the pan to loosen it. Moving it slowly to the
front edge, then with a flick of your wrist towards your body, confidently flip
the pancake over, making sure to catch the pancake in the pan.
